Ingredients

  • 2 cans black beans, rinsed and drained
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup corn (frozen or canned)
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup cooked rice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional toppings: avocado, cilantro, lime juice

Instructions

  1. Sauté olive oil in a large pot over medium heat. Add diced onions and minced garlic, cooking until fragrant, about 2-3 minutes.
  2. Add the diced bell peppers and continue to cook until they soften, approximately 3-5 minutes.
  3. Mix in the rinsed black beans, diced tomatoes, and corn to the pot. Stir well to combine.
  4. Pour in the vegetable broth, chili powder, cumin, salt, and pepper. Stir to mix everything evenly.
  5. Simmer the mixture. Let it cook for about 15-20 minutes, allowing the flavors to meld together.
  6. Incorporate the cooked rice, combining everything until heated through. Taste and adjust seasonings if necessary.
  7. Serve the soup into bowls and garnish with optional avocado, cilantro, and a squeeze of lime juice if desired.
