A delightful recipe featuring tender chicken thighs in a creamy peanut sauce, perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup peanut butter (creamy or chunky)
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/3 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional for spice)
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Chopped peanuts (for garnish)

Instructions

  1. Prep the chicken: Place the chicken thighs in the slow cooker, ensuring they’re evenly spaced for proper cooking.
  2. Mix the sauce: In a mixing bowl, combine the peanut butter, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Stir until smooth and well combined.
  3. Combine: Pour the peanut sauce over the chicken thighs in the slow cooker. Make sure the chicken is well coated with the sauce.
  4. Cook: Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easily shredded.
  5. Shred the chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir the meat to coat it thoroughly in the peanut sauce.
  6. Season: Taste the dish and season with salt and pepper as needed. Adjust the seasoning based on your preference.
  7. Serve: Garnish the peanut chicken with chopped green onions and peanuts before serving.

Notes

Chicken thighs work best for flavor and tenderness. For a nut-free version, substitute peanut butter with sunflower seed butter.
