A delightful dish capturing the vibrant flavors of the Mediterranean, prepared conveniently in a slow cooker.

Ingredients

  • 2 pounds boneless, skinless chicken thighs, trimmed if desired
  • 1 medium sweet or yellow onion, thinly sliced
  • ½ cup chicken broth (or bone broth)
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • Cooked rice, quinoa, or pita
  • Fresh dill
  • Cherry tomatoes, sliced cucumbers, Kalamata olives
  • Tzatziki sauce
  • Lemon wedges

Instructions

  1. Prepare the chicken: Place chicken thighs in the bottom of the slow cooker. Lay the sliced onions on top.
  2. Mix the marinade: In a small bowl, whisk together chicken broth, lemon juice, olive oil, garlic, oregano, thyme, sea salt, and black pepper until well combined.
  3. Pour this mixture evenly over the chicken and onions in the slow cooker.
  4. Cook the chicken: Cover the slow cooker and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until the chicken is tender and reaches 165°F internally.
  5. Finish and serve: Shred the chicken directly in the slow cooker or remove to slice. Stir the chicken to combine it with the cooking juices before serving. Enjoy over rice, in pitas, or with fresh veggies and tzatziki. Garnish with dill and lemon wedges if desired.

Notes

Use quality chicken to keep the meat juicy; monitor cooking times to avoid dryness. Customize the lemon juice and herbs to enhance the flavor.
