A comforting and wholesome Polish Potato Soup, easy to prepare with creamy textures and earthy flavors.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Sauté aromatics: In a large pot, heat a splash of oil or butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  2. Cook potatoes: Add the diced potatoes and vegetable broth to the pot. Increase the heat to bring the mixture to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 20 minutes.
  3. Blend the soup: Using an immersion blender, carefully blend the soup until smooth.
  4. Finish with cream: Return the blended soup to the heat and stir in the heavy cream. Season with salt and pepper to taste.
  5. Garnish and serve: Ladle the soup into bowls and garnish with fresh dill.

Notes

Use starchy potatoes for a creamier texture. Optional to add a splash of lemon juice or additional vegetables for flavor.
