A delicious and nutritious twist on traditional cheeseburgers, this casserole is loaded with ground turkey, cheese, and spices, making it perfect for meal prep.

Ingredients

  • 1 lb ground turkey
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 cup cauliflower rice
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s ready for your casserole.
  2. Cook the ground turkey and diced onions in a skillet over medium heat until browned, about 5-7 minutes.
  3. Stir in the cauliflower rice, diced tomatoes, Worcestershire sauce, garlic powder, onion powder, salt, and pepper, cooking for an additional 5 minutes.
  4. Beat the two eggs in a separate bowl and mix in 1/2 cup of shredded cheddar cheese.
  5. Add the turkey mixture to the egg and cheese mixture, stirring well to combine.
  6. Pour the mixture into a greased baking dish and spread it out evenly.
  7. Top the casserole with the remaining shredded cheddar cheese.
  8. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Let the casserole cool for a few minutes before slicing and serving.

Notes

Ensure proper browning of the turkey for enhanced flavor and don’t overcook the cauliflower rice. Allowing the casserole to rest after baking makes it easier to slice.
