A delightful keto-friendly twist on traditional Korean beef bulgogi, featuring tender beef marinated in a zesty sauce.

Ingredients

  • 1 pound beef (sirloin or ribeye), thinly sliced
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sesame oil
  • 1 tablespoon erythritol or sweetener of choice
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon black pepper
  • 1/2 onion, thinly sliced
  • 2 green onions, chopped
  • Cauliflower rice for serving

Instructions

  1. Prepare the Marinade: In a bowl, mix the soy sauce, sesame oil, erythritol, minced garlic, minced ginger, and black pepper.
  2. Marinate the Beef: Add the thinly sliced beef to the marinade, cover, and refrigerate for at least 30 minutes.
  3. Cook the Beef: Heat a skillet over medium-high heat and add the marinated beef, cooking until browned, about 5-7 minutes.
  4. Add Onions: Stir in the sliced onion and cook until softened, about 3-4 minutes.
  5. Serve hot over cauliflower rice, garnished with chopped green onions.

Notes

For optimal flavor, marinate the beef longer than 30 minutes if possible. Ensure the skillet is hot before adding the beef for best results.
