A comforting and satisfying Keto Taco Casserole packed with rich flavors and melty cheese, perfect for low-carb diets and family meals.

Ingredients

  • 1 lb ground beef (seasoned)
  • 1 tbsp olive oil (for cooking)
  • 1 small onion (diced)
  • 1 bell pepper (chopped)
  • 2-3 cloves garlic (minced)
  • 2 tbsp taco seasoning (sugar-free)
  • 0.5 tsp salt (to taste)
  • 0.25 tsp black pepper (to taste)
  • 0.5 cup sour cream
  • 0.5 cup cream cheese (softened)
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella
  • Optional garnishes: diced tomatoes, jalapeños, avocado, black olives, cilantro, salsa, green onions

Instructions

  1. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and chopped bell pepper, cooking until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Brown the beef: Increase the heat to medium-high and add the seasoned ground beef to the skillet. Cook until browned, breaking it apart with a spatula, approximately 8-10 minutes.
  3. Mix in the seasoning: Stir in the taco seasoning, salt, and black pepper, ensuring the beef is evenly coated. Cook for an additional 2 minutes, allowing the flavors to meld together.
  4. Prepare the creamy mixture: In a medium bowl, combine the softened cream cheese and sour cream until smooth. Then, add the eggs and mix until completely incorporated.
  5. Combine and layer: Turn off the heat, and stir the creamy mixture into the beef and vegetable mixture until combined. Pour this mixture into a greased 9×13-inch baking dish, spreading it into an even layer.
  6. Add the cheese topping: Sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
  7. Bake: Preheat your oven to 350°F (175°C). Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Garnish and serve: Once out of the oven, let it cool slightly. Top with desired garnishes like diced tomatoes, jalapeños, avocado, or fresh cilantro. Serve warm and enjoy!

Notes

Allow the casserole to rest for about 5-10 minutes before serving for easier portions. Customize toppings to suit your taste.
