Ingredients
2 pounds beef chuck, cut into 1-inch pieces
4 cups beef broth
2 tablespoons olive oil
1 onion, chopped
3 carrots, sliced
3 potatoes, diced
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 cup cheddar cheese, shredded
1 cup all-purpose flour
1 tablespoon baking powder
1/4 cup fresh parsley, chopped
1/2 cup milk
1 egg
Instructions
Brown the beef: In a large pot, heat the olive oil over medium heat. Add the beef and cook until browned on all sides—about 5-7 minutes.
Add vegetables: Stir in the chopped onion, minced garlic, sliced carrots, and diced potatoes. Cook for about 5 minutes.
Simmer the stew: Pour in the beef broth and add thyme, rosemary, salt, and pepper. Bring to a gentle simmer and cover, cooking for 1.5 to 2 hours until beef is tender.
Prepare the dumpling mixture: In a mixing bowl, combine flour, baking powder, and shredded cheese. Stir in milk, egg, and chopped parsley until a soft dough forms.
Top with dumplings: Once the beef is tender, drop spoonfuls of the dumpling mixture on top of the stew. Cover and cook for an additional 15-20 minutes.
Serve and enjoy: Ladle the stew into bowls and enjoy your hearty meal!
