Ingredients

  • 2 ripe bananas
  • 1/2 cup honey (or maple syrup for vegan option)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth, ensuring no large chunks remain.
  3. Add honey, eggs, and vanilla extract to the mashed bananas. Mix well until fully combined.
  4. In another bowl, whisk together the almond flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Avoid overmixing.
  6. Fold in the chocolate chips if using.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

Notes

Use overripe bananas for maximum sweetness and flavor. Check for doneness with a toothpick.
