Ingredients
2 cups blanched almond flour
2 tablespoons coconut oil
2 teaspoons pure vanilla extract
¼ teaspoon sea salt
1 tablespoon coconut oil
4 firm Gala apples
2 tablespoons pure maple syrup
2 teaspoons ground cinnamon
5 oz raw walnuts
¾ cup blanched almond flour
¼ cup pure maple syrup
1 tablespoon coconut oil
1 teaspoon ground cinnamon
¼ teaspoon sea salt
Instructions
Prep the oven and pan: Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
Make the crust: In a food processor, combine the almond flour, coconut oil, vanilla extract, and sea salt. Pulse until a dough forms. Press evenly into the prepared pan. Bake for 15 minutes until golden and cool on a wire rack.
Prepare the filling: Heat coconut oil in a skillet. Peel, core, and slice the apples, then add to the skillet. Stir in maple syrup, ground cinnamon, and sea salt. Cook until apples are tender, about 5 minutes. Let cool.
Make the topping: Combine all topping ingredients in the food processor. Pulse until crumbly.
Assemble and bake: Spread the apple filling over the cooled crust, then sprinkle topping. Bake for 15-20 minutes until topping is golden.
Cool and serve: Allow to cool completely before cutting into 16 bars.
