A delightful blend of tender chicken, crisp vegetables, and flavorful seasonings, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts, sliced
  • 2 zucchinis, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: Soy sauce or teriyaki sauce for extra flavor
  • Optional: Red pepper flakes for heat

Instructions

  1. Heat the olive oil in a large pan over medium-high heat until shimmering.
  2. Add the sliced chicken to the pan and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced zucchini and mushrooms to the pan and stir-fry for about 5 minutes, or until tender but slightly crisp.
  5. Season with salt, pepper, and optional soy or teriyaki sauce. Toss to combine and cook for another minute.
  6. Remove from heat and serve immediately for a fresh meal.

Notes

Using boneless, skinless chicken breasts keeps the dish lean. Zucchini adds a mild flavor and nice crunch; can swap for yellow squash if desired. Adjust soy or teriyaki sauce based on spice preference.
