Ingredients

  • 6 Whole Grain English Muffins
  • 12 Egg Whites or 6 Whole Eggs
  • 1 lb Lean Turkey or Chicken Sausage (or plant-based)
  • 2 cups Spinach (or other vegetables like bell peppers, mushrooms, or zucchini)
  • 1 cup Low-Fat Cheese (mozzarella or cheddar)
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Brown the turkey or chicken sausage in a skillet over medium heat until browned, about 5-7 minutes.
  3. Whisk the egg whites or whole eggs with a pinch of salt and pepper until well combined.
  4. SautΓ© the spinach in the same skillet until wilted, about 2-3 minutes.
  5. Combine the cooked sausage with the wilted spinach and pour the mixture into the bowl with the eggs, stirring until everything is evenly combined.
  6. Prep a muffin tin by greasing with cooking spray or olive oil, then pour the egg mixture into the muffin cups, filling each about three-quarters full.
  7. Bake for about 15-20 minutes, or until the eggs are set and lightly golden on top.
  8. Assemble each muffin by slicing in half and layering with the baked egg mixture and cheese.
  9. Store any extras wrapped in foil for easy meal prep storage.

Notes

Make sure your eggs are fully cooked to a firm texture to avoid any runniness, and keep muffin tins three-quarters full to allow room for rising.
