Ingredients
1 lb boneless chicken breast
1/4 cup peanut butter (smooth)
3 tablespoons soy sauce (divided)
1 tablespoon sesame oil
2 tablespoons lime juice (freshly squeezed)
1 clove garlic (minced)
1 teaspoon ginger (grated)
1 tablespoon honey (optional)
4 large flour tortillas
2 cups fresh lettuce leaves
1 cup purple cabbage (shredded)
1 cup carrots (julienned)
1/2 cup fresh cilantro (chopped)
Instructions
Make the Peanut Sauce: In a medium bowl, whisk together peanut butter, 2 tablespoons soy sauce, sesame oil, lime juice, garlic, ginger, and honey until smooth. Set aside.
Marinate the Chicken: Cut the chicken into strips and mix with remaining soy sauce and sesame oil. Let marinate for 10 minutes.
Prepare the Vegetables: Wash and dry lettuce leaves, shred cabbage, julienne carrots, and chop cilantro.
Cook the Chicken: Heat a skillet over medium-high heat, add chicken, and cook for 6-8 minutes until golden brown. Remove and cool slightly.
Warm the Tortillas: Warm tortillas in a skillet for 30 seconds on each side or microwave wrapped in damp paper towel for 20 seconds.
Assemble the Wraps: Spread peanut sauce on each tortilla, layer with lettuce, cabbage, carrots, chicken, and cilantro. Drizzle extra sauce if desired.
Roll the Wraps: Fold in the sides and roll tightly from bottom to top. Cut in half and serve immediately.
Notes
Use fresh ingredients for the best flavor. Don’t overstuff the wraps for easy rolling.
