A comforting meal featuring succulent chicken in a rich herb cream sauce, served with creamy mashed potatoes and sweet glazed carrots.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups heavy cream
  • 2 tablespoons garlic, minced
  • 1 tablespoon fresh herbs (such as thyme, rosemary, and parsley), chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • 4 cups carrots, sliced
  • 1/4 cup brown sugar
  • A bit of water (to steam)

Instructions

  1. Season and sear the chicken: Season the chicken breasts with salt and pepper generously. In a large skillet over medium heat, add olive oil and cook the chicken until browned and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
  2. Prepare the cream sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream, stir in the chopped herbs, and let it simmer until slightly thickened, about 3-4 minutes. Return the chicken to the skillet, coating each piece with the creamy herb sauce.
  3. Make the mashed potatoes: In a large pot, boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain the potatoes, then mash them with butter, milk, salt, and pepper until smooth and creamy.
  4. Cook the glazed carrots: In a separate pot, combine the sliced carrots, brown sugar, and a splash of water over medium heat. Cook until the carrots are tender and glazed, stirring occasionally.
  5. Serve: Plate the chicken with a generous portion of mashed potatoes and glazed carrots on the side. Drizzle extra herb sauce over the chicken for added flavor.

Notes

Ensure chicken reaches an internal temperature of 165°F (74°C) while cooking. Store leftovers in an airtight container for up to 3 days.
