Ingredients

  • 16 oz bag of frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup pasta water reserved from cooked pasta

Instructions

  1. Prepare your oven: Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Arrange the vegetables: Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Season and drizzle: Drizzle the olive oil over the vegetables and season with salt, pepper, and thyme. Toss them together until everything is well coated.
  4. Roast the vegetables: Place the baking sheet in the oven and roast for 20 minutes.
  5. Cook the pasta: While the veggies are roasting, bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/3 cup of the pasta water before draining.
  6. Blend the sauce: Add the cooked veggies to a blender along with the reserved pasta water. Blend until you achieve a silky sauce.
  7. Combine and serve: Pour the sauce over the drained pasta and toss to coat evenly. Serve immediately.

Notes

The frozen squash provides convenience without sacrificing flavor. Use fresh herbs in place of dried thyme for a more robust flavor.
