Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup peas (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add the beef cubes and brown them on all sides for 5-7 minutes.
  3. Remove the browned beef from the pot and set aside to rest.
  4. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
  5. Return the beef to the pot and mix in the beef broth, sliced carrots, diced potatoes, chopped celery, thyme, bay leaves, salt, and pepper.
  6. Bring the stew to a boil over high heat.
  7. Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours or until the beef is tender.
  8. Add peas in the last 10 minutes of cooking, if using.
  9. Remove the bay leaves before serving and enjoy.

Notes

For a thicker stew, mix a tablespoon of cornstarch with cold water and add it in the last 10 minutes of cooking.
