Ingredients

  • 1 cup pumpkin puree
  • 3 eggs
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon cinnamon (optional)
  • 1/2 teaspoon pumpkin pie spice (optional)
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Preheat a large skillet over medium heat until hot.
  2. Combine the pumpkin puree and eggs in a large bowl and whisk until smooth. Mix in optional add-ins if desired.
  3. Prepare the skillet by lightly greasing it with non-stick spray or a small amount of butter.
  4. Cook spoonfuls of batter on the skillet for 2-3 minutes until edges set and bottoms are golden brown.
  5. Flip the pancakes and cook for an additional 1-2 minutes until browned on the other side.
  6. Serve warm with additional maple syrup or your favorite toppings.

Notes

For fluffier pancakes, don’t overmix the batter and ensure ingredients are at room temperature.
